Moroccan Chickpea Soup

Following a short poll on my facebook page, I went ahead with a savoury recipe for today's food blog, I must admit I didn't try especially hard with this one as I was pretty hungry. Next week I'll try something sweet and I'll work hard on the aesthetics. I think you can slow down a little when you're making dessert as opposed to lunch ;)

I've always thought that bbcgoodfood.com is a great resource - I own lots of those little books and I love perusing their site for ideas. I came across this Moroccan Chickpea Soup and I loved it. It's so easy to make and feels super healthy. I think I made it 3/4 times in the week I discovered it!

You can find the recipe here.

The recipe suggests (I always take them as suggestions!) that you use chopped tomatoes with garlic. I usually prefer to just fry a crushed garlic clove with the chopped onion and celery.

If you like Moroccan food (which I hope you do if you're trying this recipe), this soup smells amazing when it's cooking! The longest stage in the recipe is softening the veg at the beginning, I love how you can chuck a bunch of stuff in at the end and we're pretty much ready to go!

All that's left is to add a bunch of flat leaf parsley and a spoonful of natural yoghurt (my preference!) and you have a warming bowl of soup to enjoy!

Let me know if you've made it or plan on trying it :) Next time I'll spend more time on making pretty pictures!

Much love, R. x
